1 8 oz pkg cream cheese, softened
2 tablespoons mayonnaise
1 teaspoon lemon juice
1/4 teaspoon garlic salt
1 dash Tabasco sauce
1/2 cup chopped ripe olives
1 can (9 ounces) smoked oysters, drained and chopped
PREPARATION:

smoked oysters interspersed throughout salad
serve with fruity, sweet wine to offset smokey flavor
put them in pasta or in salad.
i have used them in stuffing for thanksgiving dinner along with mushrooms----and campbells cream of mushroom soup---walnuts or almonds what ever is availiable--(slivered almonds)------

Try putting them in a pasta with some whites wine and butter sauce. Add some herbs and a little amount of finely cubed tomato maybe and Tadda! It should be quite yummy. Try using maybe spaghetti or angel hair pasta, but probably nothing like penny or macaroni just cause it may no go well with oysters. I invented this recipe as of ten seconds ago, but it sounds like it could make a tasty dish. Good luck!

Smoked Oyster Stuffed Mushrooms
* 1 teaspoon Olive oil
* 2 Tablespoons Finely chopped onion
* 1/2 teaspoon Minced garlic
* 1 (3 oz.) smoked oysters, drained or buy the kind in the pouch
* 1/4 cup Italian seasoned bread crumbs
* 2 Tablespoons Fresh, grated parmesan cheese
* 2 Tablespoons White wine
* 1 lb. Large mushrooms, washed and stems removed (chop stems)
* Diced pimento or diced red bell peppers (garnish)
1. Preheat oven to 350掳 F. In medium skillet heat oil until hot then saute onion and garlic until tender. Stir in the smoked oysters, bread crumbs, cheese, wine and chopped stems; blend well. Fill each mushroom cap with oyster mixture. Place in 13x9x2-inch baking dish. Bake, 20 to 25 minutes or until mushrooms are tender. Garnish with chopped pimento. Makes 8 to 12 servings.
Smoked oysters are awesome on Ritz crackers nothing else but, you can also make oyster stuffing (dressing) for a cajun type poultry stuffing. Make a basic corn bread dressing recipe and add 3 cans of smoked oysters and the oil with them. It makes a great dressing with a wonderful smokey flavor.
